New Erin Condren Planner & Supplies

Lately I've been hearing a lot about Erin Condren planners and I was curious to see what all the fuss is about.  I watched a bunch of videos on YouTube and finally decided that I should get one.  I got lucky that the 2015 planners are currently 40% off and I also got $10 off by using a code from someone, so it was super affordable.  

The box came while I was out of town, so I was really excited to open it when I finally got home.  The packaging is very colorful and fun.  Here's what the inside of the package looked like:

Of course I had to go out and buy some supplies to make my new planner colorful and pretty.  I got some sticky notes, colorful pens, list notepads, along with some fun paper clips and some adhesive tape.  All the paper products came from the dollar section at Target and I actually went back and found some more today that aren't pictured.  Here's everything I bought on my first trip:

I'll get to work on filling out my planner so that I can share some pictures once it's decorated.

Recipe: No Bake Energy Bites

Today I'm sharing one of my all-time favorite recipes that I just made again for the first time in a long time.  These no bake energy bites are healthy and delicious.  This was one of the very first recipes I tried from Pinterest and I've tried 235 recipes since then, but I still haven't forgotten this one.  This is just one of the recipes  that I have tried from GimmeSomeOven and they always taste amazing.  Here are the directions:

INGREDIENTS:
  • 1 cup (dry) oatmeal (I used old-fashioned oats)
  • 2/3 cup toasted coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup ground flax seed
  • 1/2 cup chocolate chips or cacao nibs (optional)
  • 1/3 cup honey or agave nectar
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon vanilla extract

DIRECTIONS:
  1. Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.
  2. Once chilled, roll into balls of whatever size you would like. (Mine were about 1" in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.
  3. Makes about 20-25 balls.
